“It will be like belonging to two different gyms,” said Manley. “Work fast and hard,” the motto of Fitness Club Merritt Island, applies not just to the membership, but also to the owners. “All the equipment will be spaced out, so it will basically be built-in social distancing,” said Manley.

"We are keeping Merritt Island Pancake House," Kelly said. He was a former corrections officer at New York’s Rikers Island, one of the world’s largest correctional institutions.

The bar also will provide seating for solo diners.

There's a foot pedal-activated hand-wash station near the entrance, something available at the Merritt Island restaurant, too.

If all goes well, Kelly and Steve Mardis hope to have their latest venture, My Island Pancake House, up and running in Rockledge by September.

Plans are in the works for a patio out front, and the parking lot needs to be patched and resurfaced.

Inside, LED lighting panels have been installed on the beamed ceiling, and red brick walls are being painted light blue.
